We smoke a variety of meats including beef brisket, pork ribs (both spare and baby back), pulled pork shoulder, smoked chicken, house-made sausage links, and turkey breast. Brisket and ribs are our signatures, but everything comes off the smoker with the same care and attention.

We primarily use post oak for brisket (traditional Texas style), hickory for pork, and fruitwoods like apple or cherry for poultry. Each wood brings different flavor characteristics - oak gives a clean smoke, hickory is bolder, and fruitwoods add subtle sweetness.

A full packer brisket typically takes 12-16 hours at around 250 degrees, depending on the size. We start smoking well before dawn to have fresh brisket ready for lunch service. Good barbecue can't be rushed - the low and slow process is what creates that tender, juicy result with a proper bark on the outside.

Yes, all our rubs and sauces are made from scratch using our own recipes. The dry rub is a blend of pepper, salt, garlic, and other spices we've refined over time. Our sauce comes in original and spicy varieties, both with a tomato-vinegar base that balances sweet and tangy flavors.

While we're a meat-focused establishment, we offer plenty of sides that work for various dietary needs. Coleslaw, baked beans, collard greens, and mac and cheese are all vegetarian. Most of our smoked meats and several sides are naturally gluten-free - just let us know your requirements and we'll help you navigate the menu.

Placing Orders

Absolutely. Brisket, pulled pork, and other meats are available by the pound for takeout. This is a popular option for family dinners or when you want to build your own sandwiches at home. We recommend ordering ahead for larger quantities to ensure availability.

For orders over 5 pounds of meat or for weekend pickups, we recommend calling at least 24-48 hours ahead. This gives us time to smoke enough to meet your needs without running short for other customers. For weekday orders under 5 pounds, same-day calls usually work fine.

BBQ is a first-come, first-served business because we smoke fresh daily. Brisket and ribs often sell out by early afternoon on weekends. If there's something specific you want, placing an advance order is the surest way to get it. We can also give you a call when your favorite item is running low so you know to come early.

For regular orders, we focus on dine-in and pickup to ensure the best quality. For catering orders over a certain size, delivery and setup are included. We can also work with third-party delivery services in our area if you prefer that option for smaller orders.

Refrigerate leftovers within two hours. To reheat brisket, wrap it in foil with a splash of liquid (broth or even apple juice works) and warm at 275 degrees until heated through. Ribs can be reheated the same way. Avoid microwaving if possible - it tends to dry out the meat. Properly stored, our BBQ stays good in the fridge for 3-4 days.

Events and Catering

Planning a party, corporate lunch, or special occasion? Here's what you need to know about our catering services.

We cater events ranging from small office lunches of 15-20 people up to large weddings and corporate gatherings of several hundred. Our catering setup scales to match - smaller events might be drop-off style, while larger ones can include full service with staff, equipment, and on-site carving.

For smaller events, 1-2 weeks notice is usually sufficient. For large events or dates during busy seasons (graduation, wedding season, major holidays), we recommend booking 3-4 weeks ahead or more. Weddings and events requiring full service should be booked as early as possible to secure your date.

Yes, we work with clients to ensure all guests are taken care of. We can separate items, clearly label dishes, and suggest menu combinations that work for various dietary needs. Just let us know the requirements when planning your event and we'll make sure everyone has great options.

Full-service includes food preparation, delivery, setup, serving staff, carving stations if applicable, cleanup, and all necessary equipment (chafing dishes, serving utensils, etc.). We handle everything so you can focus on your guests. The specifics depend on your event size and needs, which we'll discuss during planning.
